You could use other varieties of apples, but Cortland's really do make the best applesauce in the world!

16 Cortland apples
1/4-1/2 cup water
4 inch piece cinnamon stick (optional)

Directions:
Directions:
Quarter the apples and remove the core. Place the apples in a large stock pot with enough water to cover the bottom of the pot. Add the cinnamon stick if using. Cover the pot and cook over medium heat until the apples are very soft, about 15 to 20 minutes. Remove from the heat and let cool for a few minutes. Remove the cinnamon stick. Put the apples through a food mill.
