CRUST:
3/4 cup butter
1 cup white sugar
2 eggs
1 teaspoon vanilla
2 1/2 cups flour
1 teaspoon baking powder
1 teaspoon salt
Press into two 12 inch pizza pans.
Bake at 350F for 10 minutes or until golden brown. (May cool and freeze one crust for later).

TOPPING:
8 oz. cream cheese
1/3 cup icing sugar (or white sugar)
1 teaspoon vanilla
Spread on top of cooled pizza crusts and top with fruit of choice.
GLAZE:
1 cup pineapple juice
2 tablespoons cornstarch
1/2 cup sugar
1 teaspoon lemon juice

Cook glaze until thickened. Pour over fruit and store in fridge.

Personal Notes:
A simpler glaze is 1/4 cup apricot or peach jam mixed together with 1 tablespoon water. May put through a sieve to get rid of chunks. Dab onto fruit using a pastry brush.
