2 eggs
1 over ripe banana




Directions:
Directions:
Mash banana until mostly smooth. Add eggs and beat until the mixture is mostly free of clumps. Add a pinch of cinnamon and a dash of vanilla and combine.
Spoon mixture on a lightly oiled pan on medium heat and cook for about 2 min each side.
Enjoy plain, with syrup or honey. They are even good cold with peanut butter!

This is a great gluten/dairy free recipe. It's also great to get kids to eat eggs without the egg flavor. They are soooo delicious.
