1 1/2 lbs. fresh broccoli
□ 2 c. water
□ 1 pt. half & half
□ 1 lb. pasteurized processed cheese (like Velveeta)
□ 3/4 tsp. salt
□ 1/2 tsp. pepper
□ 1/2 c. cornstarch, mixed with 1 c. cold water

Directions:
Steam broccoli until tender. Meanwhile, place half & half and water in top of double boiler. Add cheese, salt, and pepper. Heat until all cheese is melted. Chop and add broccoli. Stir cornstarch/water in small bowl. Stir into cheese mixture in double boiler and heat over simmering water until soup thickens

I do not use a double boiler - I just put it in a heavy pot that is sprayed with PAM and use a low heat so it doesn't stick.
