1 lb. Hamburger
1 medium onion chopped
1 medium eggplant peeled and diced
1 C. uncooked rice
2 C water
salt

American cheese slices

Directions:
Directions:
Sprinkle eggplant with salt & let set for about 20 - 30 minutes - this will remove some of the bitterness of the eggplant. Rinse with cold water.
Brown the hamburger meat with onion. Drain excess fat. Add rinsed eggplant to the meat & onion.

Add rice and 2 cups water to skillet or pan. Cook about 20 minutes until rice is done. Do not open the lid to check until after 20 minutes.(OR YOU CAN COOK THE RICE SEPARATELY ACCORDING TO PACKAGE DIRECTIONS AND ADD COOKED THEN JUST HEAT TOGETHER).
Just before serving add the American Cheese slices to the top, cover until melted and serve.
