1 cup arepa corn flour (masarepa)
1.5 cups lukewarm water
2 tbs butter
3 pinches salt

Pour 1 cup of Masarepa flour into mixing bowl, pour warm water into the bowl and start mixing in the water with flour with your hands. Once flour is mushy and the perfect in-between of flour and water you can pour 2 tbsp of melted butter and 1tsp of salt.
Optional: add white Colombian cheese into the mix. White mexican cheese will do if you can't find Colombian cheese at your local grocery store :).
Make a snowball-like shape with the flour and start flattening the ball until it is perfectly flat and circular and about .5 inch thick. Note: if the flour is sticky, add water to your hands as many times as needed and continue shaping.
Place your arepa on a large skillet covered in butter on medium heat. Place as many arepas as possible on the skillet as it is a very slow cooking process. After about 15-20 minutes flip your arepa and cook for another 15-20 mins. Texture should be crunchy on the outside and soft on the inside. Once the arepas are spotty on both sides, they are ready!

Add butter, white cheese, and salt on top of one flat surface of the arepa for taste and enjoy!

This recipe can be modified by adding more or less salt, butter and/or cheese. I like to eat this kind of arepa with my morning coffee for breakfast. You can also serve mini arepas as hors d'oeuvres when hosting or for a small midday snack. Shredded beef or avocado are other options for toppings.
