Busia’s Homemade Chicken Soup Recipe

Ingredients: 1 whole fryer chicken cut up 1 gallon water (approx.) 1 large or 2 small carrots 1 stalk celery 1 small to medium size yellow onion 1 medium size bunch parsley to taste 2 or 3 bouillon cubes (Kucharek’s is preferred) 3 tbs. salt

Directions:1. Cut up chicken and add to soup pot. (Remove skin if desired). 2. Pour in about 1 gallon of water depending on size of chicken. 3. Add 3 tbs. salt and bring to a boil. While waiting for soup to boil, complete steps 4-7.
4. Peel carrot(s) and cut into desired number of pieces (4 or 5). 5. Cut celery similar to carrots. 6. Peel onion. 7. Soak all vegetables plus desired amount of parsley in separate bowl of water prior to skimming.
Skim top of soup after boiling. Set flame to low. Add vegetables to soup after skimming, discard water used to soak. Add 2 or 3 Kucharek bouillon cubes. Cover soup and cook for about 1 hour and 45 minutes on low flame.
While soup is cooking choose your favorite package of noodles. Kluski are the best! Prepare according to package directions. Set cooked noodles aside.
When soup is done, add noodles and enjoy! |

Notes: The only thing that would enhance this recipe is to purchase a fresh chicken from the "Sklep z Kurczaka" on Fullerton Ave. It just needs to be defeathered and singed! Smacznego!
