Farm fresh eggs
Olive Oil or Butter
Thick, hand-cut white bread -- ideally fresh from your local baker
Salt and pepper
Freshly grated Parmesan cheese (optional)

Directions:
Directions:
Melt butter or heat olive oil in a well seasoned cast iron (or nonstick) skillet.

Place bread on cutting board and use a 3-4" in diameter cup (with a thin rim) to cut a round hole in your bread (Noah's method)
- or -
Tear out a similar sized hole by hand (Susie's method)

Place bread and hole in pan.

Crack egg into hole.

Season (including hole) with salt+pepper.

Flip, sprinkle with Parmesan cheese if desired, and continue frying to desired doneness.

Bread should come out nicely toasted / golden brown, while egg yoke is still runny.

Our mom, Patty, used to make these and they are fantastic. Susie prefers to tear the bread so that the egg more intimately works its way into the nooks and crannies of the bread, which I can completely understand, but I prefer that crisp, perfectly round hole on the side.
