For Meatloaf:
2 lb. ground chuck
3/4 c. quick-cooking oats
1 medium onion, chopped
1/2 c. ketchup
1/4 c. milk
2 large eggs, lightly beaten
1 tbsp. prepared horseradish
1 tsp. salt
1/4 tsp. pepper

For Red Sauce:
1/2 c. ketchup
1 tbsp. prepared horseradish
3 tbsp. brown sugar
2 tsp. Dijon mustard

Directions:
Directions:
1) Preheat oven to 350º F (180º C).
2) In a mixing bowl, combine all ingredients for the meatloaf. Split your mixture into two equal parts and shape each portion into a loaf - you should have 2 medium-sized loaves.
3) Place the loaves onto a lightly greased broiler pan and bake for 35 minutes.
4) While your loaves are baking, combine red sauce ingredients and set aside.
5) When the loaves have baked for 35 minutes, pull the pan out and spoon the red sauce evenly over each loaf. Return the pan to the oven and bake for an additional 10 minutes.

Excellent with mashed potatoes! You can freeze pre-made, uncooked loaves for up to 3 months. Wrap in foil, freeze, thaw for 8 hours in foil. Bake in foil for 45 minutes or more.
