1 tbsp. butter
bacon grease
1/2 bag spinach, cleaned and dried
holiday ham or deli imported ham, cut into small pieces
1/4 c. grape tomatoes, cut into small pieces
8 eggs
2 tbsp. milk
1/2 c. shredded cheddar cheese

Directions:

In a 10 to 12" skillet, melt butter and add bacon grease to cover the bottom of the pan. Add ham to pan and brown lightly on medium-low. Add spinach until wilted then add tomatoes until warm. Place eggs in a blender, add milk and blend well. Turn heat to medium and add egg mixture. Cover with lid. Turn heat down to low to set eggs on the bottom. Once partially set, take a spatula and cut into 4" wedges. Sprinkle cheese onto the top of eggs and then turn in the pan to cook cheese side. Place the lid back on until set not brown. Sprinkle with salt and pepper, and serve.
