1 Rotisserie Chicken (or Chicken Breasts)
1 Onion
1 Can of Diced Tomatoes
1/2 Tbsp. of Minced Garlic
1 Tsp. Cayenne Pepper
1 Tsp. Cumin
2 Tbsp. Chopped Cilantro
1/2 Package of Bow-tie Pasta
A Dash or 2 of Tabasco =)
Lemon or Lime

Optional Garnishes
Sour Cream, Cheese, Avocado, Green Onion, Tortilla Strips

Dice cooked chicken and onions. Add all ingredients, except pasta, to large stockpot and heat until a rolling boil, turn to simmer. Add pasta and cook 1 hour on simmer, stirring occasionally. It really needs the acidity of a lemon or lime but this should be added almost as a garnish when putting in the bowls. Add some, OR ALL! of the garnishes and enjoy.

Seems to be a hit with the Lutschkin girls so I will add this one. Have substituted rice one time and quinoa another if you don't have pasta. The picture is a version Rachel did. =)
