Ingredients: Dough: 4 cups flour 1 lb. butter ¾ cup milk
Filling: 1 lb. almond paste (2 cups) 3 eggs - leave 1 egg white out 2 cups sugar

Directions:1. Make Dough: Mix flour with softened butter until crumbly; add milk. Mix to form a ball of dough. Start with mixer, finish with hands. Refrigerate overnight.
2. Make Filling: Combine ingredients, and mix until smooth.
3. Divide chilled dough into 8 parts. Roll out dough 12 long and about 5 or 6 inches wide, then fill with paste. Roll up, brush with egg white (that has been slightly beaten), and sprinkle with sugar. Bake at 375º for 30 or 40 minutes. |

Notes: A holiday tradition passed down from the DeVries family. Gertrude DeVries was taught the how to make butter letter from her mother-in-law, Jessie DeVries. Janet DeVries learned it from Gertrude. Bridget learned the process as a toddler and has always loved to bake. The Butter Letter pastry is a Christmas tradition. The filled strips can be shaped to resemble letters of Surnames.
Very few people can roll the dough the correct thickness and determine how much filling for each pastry.
Gert used to make a double recipe. Her advice is to make each batch separately and keep covered and refrigerated until ready to roll and bake.
Important: The Almond Paste is the unsweetened variety, previously only available in Holland, Mich., and on some Scandinavian baking websites.
It's worth the work.
