6-8 large eggs, well beaten
2 c. cream
1 1/2 c. Swiss cheese, shredded
1/4 tsp. nutmeg
1/2 tsp. salt
1/4 tsp. pepper
Fillings as desired
California Quiche: add chopped onion, chopped green and red pepper, crisp crumbled bacon or diced ham and substitute Co-jack for Swiss cheese. Thinly slice 2 Roma tomatoes to edge the top of the quiche after edge is set (10-15 min.).

Combine ingredients in a large bowl.
Coat 10" microwavable quiche dish with butter or Pam.
Pour egg mixture in dish and microwave on medium for 20-30 min.
Will poof up at the edges, but is done when toothpick comes out clean from center.
May need to stir edges to the middle after 10 minutes to prevent burning of edges.
Cool for 2-3 min. before serving.
