3 c. zucchini (or other squash), quartered & sliced
2 medium onions, wedged
2 tomatoes, wedges or 1 16-oz. can diced tomatoes
2 large green peppers, sliced
1 clove garlic, chopped
1/4 t. coarse grind black pepper
1 t. chili powder
1/2 t. seasoned salt
8 oz. shredded cheddar cheese

Directions:

Brown zucchini or other squash in slight amount of oil. Add onions, peppers and garlic until onion is tender. Add tomatoes and spices, cover and cook about 20 minutes. Add shredded cheese and cook until melted.
