2 1/2 c. peach juice
3 lb. peaches
3 1/2 c. sugar
1 box powder pectin

Directions:
Directions:
Peel peaches (do not crush) and place in a kettle and add water to cover. Bring to a boil and simmer 30 minutes. Drain and strain juice through a cheesecloth or jelly bag. Mix pectin and juice and bring to a hard boil. Add sugar all at once, stirring gently and bring to a rolling boil. Boil 1/2 minute, stirring constantly. Remove from heat, skim foam from top. Pour into jars, clean sealing edge with damp towel. Tighten lids.
