12 oz mushrooms
2 1/4 c chicken broth
8 sprigs fresh thyme
1 sprig fresh sage
1/4 t cracked black pepper
1 med. onion, chopped
1 c carrots, chopped
1 c celery, chopped
3 T olive oil
1/2 t salt
7 c dried, crumbled Corn bread
1/3 c dried apricots, strips
3 T parsley

Directions:
Directions:
Put mushroom stems, thyme, sage and pepper in small saucepan with chicken broth and simmer over low heat. Slice mushroom tops, onions, carrots and celery in baking dish. Drizzle with oil and sprinkle with salt. Roast uncovered, in a 425 degree oven for 15 to 18 minutes. Remove from oven, add crumbled cornbread, apricots, parsley and sage. Remove mushroom stems and herbs from broth. and add broth to cornbread mixture. Bake uncovered for 25 minutes at 425 degrees.
