4 potatoes cooked and mashed (made 2 pounds 11 ounces for 6 people)
1 ½ cups cottage cheese
¼ cup plain Greek yogurt
2 Tbsp. green onions, chopped
Salt and Pepper (to taste)
2 Tbs. melted butter
¼ cup Pine Nuts (toasted or not)

Mix potatoes, cottage cheese, yogurt, onions, salt and pepper until smooth. Place in a shallow casserole, cover with pine nuts and dot with butter. Bake for 30 minutes in a 350 oven.
