1 lb. ground beef
1 tsp. oregano
1 tsp. cumin
4 cloves garlic
1 medium white onion, chopped finely
1 small green pepper (pepper of your choice... jalapeño preferred)
1/2 c. beef stock
3/4 c. tomato sauce
2 small potatoes, peeled & diced
salt & pepper to taste
olive oil for sautéing
2 packages of Goya brand empanada discos

Directions:

In a large pan, heat the oil. Sauté the onions, pepper and garlic until soft.
Add the ground beef, seasoning, beef stock and tomato sauce. Cover and cook over medium heat for 15 minutes.
Add the diced potato. Cover and cook for another 15 minutes or until potatoes are done.
Remove cover and cook another 15 minutes or until the liquid is fully evaporated, but the meat is still moist.

Let the mixture cool completely.

Using thawed discos and working on a floured surface, roll out one disc until it's about a 1/2" wider. Spoon in a tablespoon of filling and fold over into a half-moon shape. Seal edges with a little water. Continue with the rest of the discos.

Bake filled empanadas at 400º for about 15 minutes, or until brown.
