1 lb of fresh Tombo/albacore/Shiro Maguro tuna filets
1/2 cup godd quality mayonnaise
1/4 cup finely chopped sweet onion
1/4 cup minced cilantro
1 tbsp rice vinegar (or sherry vinegar)
dash of Sriracha sauce
salt and pepper
olive oil

Directions:
Directions:
Slice tuna into 1 inch thick steaks. Season with salt and pepper and saute in olive oil over medium low heat. Let fish cook until mostly done and then turn off stove, cover pan and let fish steam in its own juices. After 5 minutes remove fish and break apart into large mixing bowl. Add mayo, onion, cilantro, and vinegar and mix well. Add more mayo, if needed, to get to the right consistency. At the end add a dash or two of Sriracha sauce. Serve on toasted bread with sliced tomatoes and lettuce.

Option: Add 1/8 cup sweet relish to the tuna mixture.
