4-6 Pork Chops (thin cut)
Salt and Pepper

Seasoning/Coating
1/3 C. Flour
2 Tsp. Cayenne Pepper
1 Tbsp. Garlic Salt
2 Tbsp. Lawry's Seasoning Salt

Mashed Potatoes
6 Large Potatoes or 8 Small (Your preference on the type)
1 Stick of Butter
8 oz. Sour Cream
4 oz. Cream Cheese
Salt and Pepper
1/2 C. of Milk or Heavy Cream
(No one said they were healthy!)

Apple Compote
5 Apples (I prefer not to use Granny Smith but any other will do)
1/2 C. Brown Sugar
2 Tsp. Cinnamon
Dash of Nutmeg (optional)
1/2 Stick Butter
1 C. Apple Juice or Apple Cider

1 Packet of your desired gravy (or make it from scratch)
Any other sides you wish to have such as salad, grilled asparagus etc.

I do it in the following order because some things take longer than others to make. For example, the chops are like 5 min compared to 20/30 for apples and potatoes. Skin potatoes if you wish and dice, then boil in water until tender (fork can go through), drain. Put in mixer like Kitchenaid or hand mix, your choice. Add the potato and other ingredients all together and mix until whipped. Salt and pepper to taste. While potatoes are boiling core and dice apples into bite sized chunks. In a pan add butter until melted, add apples and sauté on medium heat. After about 5 min add other dry ingredients and continue to meld the flavours. Once cooked down deglaze the pan with the juice and turn to simmer allowing it to reduce down into a compote. In a deep plate mix seasoning together. Salt and pepper the pork and then dust both sides of the chops. It should be coated entirely but lightly. Heat pan and add a bit of oil. Once hot, fry pork chops on each side until golden brown. I do this on medium so it does't burn but cooks through. Will not take long because they are thin cut. Assemble plate and enjoy.

My dear friend Lindsay (whom you all know) used to call pork chops "little meat". This has become her and Arianna's favourite meal so I dedicate this meal to them every time I make it. The picture shown is actually a variation I did with breaded chicken and larger apple bites. But it is pretty close to the way it looks.
