Ingredients: 1 lb. spaghetti 1/2 lb. thickly sliced bacon 3 small cloves of garlic, peeled 2 large eggs Black pepper to taste 1/2 c. grated Pecorino Romano or Parmesan cheese (plus more for serving)

Directions: |
Directions:1) Bring a large pot of salted water to boil. Add spaghetti and cook according to directions (usually about 9-10 minutes). 2) Cut the bacon crosswise into 1/2-inch wide pieces. Put into a skillet and cook until fat begins to render. 3) Add garlic to bacon and cook another 5 minutes, until edges of bacon start to get crisp (you don’t want it too crisp or it won’t meld into your pasta). 4) Meanwhile, break eggs into a large bowl and beat them with a fork. Grind some pepper into the eggs. 5) Remove the garlic from the bacon and drain some of the fat from the pan (keep some to add to pasta). 6) When pasta is cooked, drain it and add it into the beaten eggs. Mix thoroughly - the heat should cook the eggs. Add the bacon, fat included and toss again. 7) Add cheese and serve (with more cheese on the table). |
