2-3 ripe avocados, diced
2 jalapenos (or less for less kick), seeded and diced
1/2 chopped red onion
2 pints cherry tomatoes, diced
1 small bottle of regular Italian dressing
1 (15-oz.) can black eyed peas, drained and rinsed
1 (15-oz.) can black beans, drained and rinsed
1 (11-oz.) can Mexicorn, drained (or substitute regular corn)
1/2 c. chopped black olives (or more)
Salt and pepper to taste

Combine all ingredients and let chill for 2 hours prior to serving. Serve as a dip with tortilla chips.
