Sourdough starter
all purpose unbleached flour
baking soda
baking powder
flax meal
eggs
salt
yogurt
maple syrup

Feed the starter and stir and leave at room temp the night before.
1-1.5 cup starter
2 eggs
dash salt
1 tsp sugar
1 tbs cooking oil
1tsp baking soda
1tsp baking powder
handful of huckleberries thawed

beat the eggs and stir in the rest of the ingredients with the soda being the last entry as it will make the batter fluff up and increase in volume.
Pour batter on a hot cast iron griddle and turn about the time the bubbles have stopped popping on the top. Put on a platter in a warm oven until all cakes are done.

I butter each cake as it goes from the skillet to the warming oven.
You can use bananas and cinnamon instead of hucks.
Use vanilla honey/yogurt or 'maple' syrup on top.
Serve by themselves or more likely with sausage, bacon or fruit salad.
Good with orange juice and a shot of Jim's DT 165 in it or Coffee and Irish cream.
