1 Gallon Fish
4 Cups White Vinegar
2 1/2 Cups Sugar
1 Cup Silver Satin Wine
1/2 Cup Pickling Spice
1 Large Purple Onion
White Vinegar for soaking (6 Cups +)

Directions:
Directions:
In large bowl fill half full with cold water, keep adding salt (enough to
float an egg). Add fish, let sit in refrigerator for 24 hours. Drain well and rinse. Put fish back in large bowl and cover with white vinegar. Let soak in refrigerator for 24 hours. Drain. In pan add 4 Cups vinegar, sugar, wine,
pickling spices, and onions. Refrigerate 3 more days then jar up.
