4 C. potatoes, cubed (do not peel)
1 1/2 C. carrots, chopped
1 C. celery, chopped
1/2 C. string beans
1 green pepper, chopped
1 C. sweet peas
1 onion, chopped
1 (10 oz.) bag spinach
6 C. water or vegetable broth
1/4 C. butter
1 1/2 tsp. salt
1 tsp. pepper
1 1/2 tsp. dried sage
1 tbsp. dried basil
1/4 C. chopped parsley

Directions:
Directions:
Place vegetables and water into Dutch oven. Bring to a boil. Add butter, s/p and herbs. Simmer until vegetables are tender, about 30 minutes.
Low in calories and fat.
