Ingredients: 1 lb high quality ground beef 1 lb ground veal 1 lb ground pork 1 lb ground Italian sausage 1 cup bread crumbs 1/2 cup half and half 1 onion finely chopped 1/4 cup finely minced Italian parsley 1/4 cup finely minced combination of oregano, cilantro and/or sage 2 eggs 1/4 cup Thai sweet chili sauce 1/2 cup of red wine 1 cup roughly chopped combination of onion, carrots and celery 1 liter chicken stock

Directions:combine bread crumbs and milk in large mixing bowl. Add beef, veal, pork, sausage, finely chopped onion, parsley, minced herbs, eggs, and Thai chili sauce. Mix well to fully incorporate. Form into meat balls about the size of a tennis ball.
Heat a dutch oven over medium and add some olive oil. Brown the meat balls in batches adding additional oil as needed. Once all the meat balls are browned, add the chopped onions, carrots and celery and cook for a minute.
Next deglaze the pan with the red wine and let the alcohol burn off. Add back the meat balls on top of the onion/carrot/celery mixture. Add enough chicken stock to mostly cover.
Heat oven to 275º and put covered dutch over in for 2-3 hours.
Optional: After cooking the meatballs, remove from dutch oven and keep warm. Put the dutch oven back on the stove and reduce the cooking liquid by 50%. Add a couple of tablespoons of good quality tomato paste. Serve sauce over meatballs and pasta. |
