3 1/2 C. flour (pizza flour is best)
2 pkg. dry yeast
1/2 tsp. salt
2 tbsp. sugar
2 1/2 C. lukewarm water
2 1/2 C. flour
1/4 C. dry white wine, at room temperature

Directions:
Directions:
Combine the yeast and warm water to start activity. Combine 3 1/2 C. flour, salt and sugar. Make a well in the center of the flour mixture and add yeast, water, wine and 2 tbsp. olive oil. Add remaining flour. Stir until mixture is stiff and until dough comes together and pulls away from the sides of the bowl. Sprinkle flour on working surface and knead dough until smooth. Oil a large clean bowl and add dough. Turn to coat. Cover with plastic wrap or kitchen towel and set in a warm part of the kitchen. Let dough rise until doubled, about 1 hour. Punch down dough and it is ready to use. I like a thin, crisp crust and if it rises any more than 1 hour it will be a thick pizza crust. Before topping the crusts with sauce, etc., bake in a 450º oven until lightly browned; 5-8 minutes. Then add the toppings. Makes three 16" pizza crusts. Allow at least 2-3 pieces of pizza per person.
