Peggy was a neighbor of Grandma's when they lived in Elberon, NJ. She was a wonderful Italian cook and taught Grandma how to make sauce (gravy), meatballs and this lasagna. I love the lack of direction here. This recipe epitomizes the way Grandma cooked (much like I do)- a little of this, a bit of that. In other words, just wing it.

1 lb. Lasagna noodles
2 lbs. ricotta cheese
l large mozzarella cheese
Grated Parmesan cheese
Sauce with meat
2 lbs sweet sausage
3 eggs

Mix eggs into ricotta
Put gravy in dish first
Bake 1/2 hour at 350 degrees

So, to expand on that a bit.
Cook the lasagna noodles according to the package directions. Drain well.
Crumble and cook the sausage until done. Sitr the sausage into the meat sauce. You're going to need about 2 quarts of sauce. To make meat sauce, you can brown 1 pound of ground beef and stir it into a high quality jarred tomato sauce.
Slice the mozzarella cheese.
Stir the eggs into the ricotta cheese.
To assemble the lasagna, spoon some sauce into the bottom of a 9 x 13 inch baking dish. Place a layer noodles in the dish. Spoon some of the ricotta mixture onto the noodles then sauce then mozzarella. Repeat the layers ending with a layer of noodles, sauce and mozzarella. Sprinkle the top with Parmesan.
Bake at 350 degrees for about 1/2 hour, or until bubbly and melted. Let sit for 10 minutes before serving.
