1 1/4cups water
1 pkg. Uncle Bens Fast Cooking Long Grain Rice (6 1/4oz box)
2T. Butter
1/2tsp red pepper flakes as desired
1lb shrimp, cleaned, deveined, tails removed
1 can artichoke hearts (14.5oz) cut into bite sized pieces
1/4cup sour cream
2-4tsp. fresh chopped cilantro
lemon wedges

Directions:
Directions:
Combine water, rice, rice seasoning packet, butter and red pepper flakes in 10" skillet. Bring to a boil. Cover tightly and simmer until all water is absorbed, about 5 minutes. Stir in artichokes, heat through and remove from heat and let stand 5 minutes or until liquid is absorbed. Stir in sour cream. Sprinkle with cilantro and serve with lemon wedges. Makes 4 servings and takes only 15 minutes to prepare.
