5 Tbs. butter (or oil)
1/2 cup sugar
1/2 cup firmly packed brown sugar
2 large eggs
1 tsp. vanilla (in it's place I have used 1 tsp. banana extract)
1 1/2 cups mashed very ripe bananas (3-4 medium)
1 3/4 cup flour
1 tsp. baking soda
1/4 tsp. baking powder
1/2 tsp. salt
1/2 cup heavy cream (canned milk or buttermilk will also work)
1/3 chopped walnuts or pecans
chocolate chips are good in this also

Preheat oven to 350º Pam or grease a loaf pan or 12 cup muffin tin

In large bowl beat butter until light & fluffy. (If using oil add the sugars now and mix.) Add sugars, eggs & vanilla until well blended. Add mashed banana and beat on high for about 30 seconds.
Combine dry ingredients and whisk together to make it a bit lighter. Add flour mixture to wet ingredients alternately with your heavy cream ending with your flour.
This actually makes a lighter batter. Fold your nuts and/or chocolate chips into batter.
Pour into prepared pan & bake until toothpick in the center comes clean. If using a large loaf pan it usually is about 45-50 minutes.Times vary depending on your oven & pan or tins you use, so watch it closely.

Quick breads are pretty much a no-fail deal. This recipe tastes the best of others I have tried.
I wanted this last picture of our great-grandmother, Golda Gillaspie, in the cookbook.
I think had we lived closer to her we might have called her Nana.
