1 pkg. yeast (2 1/4 tsp.)
3/4 c. warm water
1 1/2 tsp. sugar
1 1/2 tsp. olive oil
2 1/2 c. flour
1 T butter
Sauce:
1 1/2 T. olive oil
1 clove garlic, minced
1 14-oz. can diced tomatoes, drained
1/2 tsp. oregano
1/2 tsp. basil
1/2 tsp. pepper
1/4 tsp. salt
1 pinch sugar

Dough:
In a large bowl, dissolve yeast in warm water. Stir in sugar, olive oil, and 1 1/4 c. flour. Beat mixture until smooth. Mix in remaining flour to create soft dough. Turn dough onto lightly floured surface and knead until smooth, about 4 minutes. Place in a buttered bowl and cover with a moist cloth and let rise for 30 min. Punch down dough and roll into a 14" circle and form a rim. Brush dough with oil.
Sauce:
Heat oil and brown garlic. Add tomatoes and spices. Cook over medium heat for 15 minutes until sauce thickens. Spread sauce on uncooked crust and cover with mozzarella cheese and whatever else your heart desires. Cook at 450º for 12-15 minutes.

I puree the sauce for easier spreading, but it is good with chunks too.
