1 cup cooked quinoa
1 15 oz can black beans, drained and rinsed
1 can sweet corn, drained
1 red bell pepper, diced
1/4 cup cilantro, chopped

3 Tbsp lime juice
2 Tbsp olive oil
2 tsp ground cumin

Directions:
Directions:
Combine the cooked quinoa, beans and veggies in a large bowl. In a separate bowl combine olive oil, lime juice and cumin. This dressing can be altered with additional spices and flavors. I added some salt and pepper as well as lemon juice. Toss the salad with the dressing and serve. This salad can be served warm or cold.
