2 lbs yellow or white squash chopped into bite size pieces
1/2 onion chopped
1 lb. hamburger
1 c. rice
2 c. water
ro tel tomatoes
American cheese slices 6 - 8
salt & pepper to taste

Directions:
Directions:
Boil squash until tender in salted water, about 10 - 15 minutes. Drain
Brown hamburger meat, onion, salt, pepper and then drain excess fat.
Cook rice in 2 cups water with 1 T. Salt - cook according rice directions.
Put everything together EXCEPT cheese in a skillet or oven proof pan.
Put cheese slices on top, heat on stove top until hot if in skillet; or heat in oven 350 degrees until hot about 10 minutes.
