2 Large or 3 Medium Apples
3 tablespoons butter
3 tablespoons sugar
1 1/2 teaspoons of ground cinnamon
3 eggs, at room temperature
1/2 cup of milk, at room temperature
1/2 cup all-purpose flour
1/2 teaspoon salt

1. Preheat the oven to 425 degrees
2. Mix the cinnamon and sugar in a small bowl
3. Peel he apples and cut into 1/4 - inch slices
4. Melt the butter in a skillet that's 8 or 9 inches at the base. Add the Apple slices so they cover the bottom of the skillet completely. Sprinkle the cinnamon-sugar mixture evenly over the apples. Saute the apples until they soften and become a light golden brown on both sides.
5. Put the other ingredients in a mixing bowl and beat until mixed.
6. After apples are done cooking on stove top pour batter mixture over the apples.
7. Bake approximately 18 minutes. Don't open the oven door to see if it is done while it is baking, use the oven light. The pancake will puff up and it should not appear wet on the top.
8. To serve, invert the pan over a large round plate. You make need to use a spatula to make sure it is not sticking to the pan.

Tom's tips: Do not cut the apple slices too thin. They will cook up too fast and turn to applesauce.
