1/8 cup olive oil

1 pound ground turkey

1 medium onion, chopped

2 stalks celery, chopped

1 1/2 medium red bell pepper, seeded and chopped
1 medium jalapeno pepper, seeded and minced
2 teaspoons dried oregano
1 teaspoon cumin

1/4 teaspoon crushed red chili flakes
1 1/2 teaspoons paprika

3 cloves garlic, minced
3 tablespoons tomato paste
1/3 cup cider vinegar
1 teaspoon salt
1/2 cup manzanilla stuffed olives, sliced
1/4 cup raisins

1/4 cup capers, drained

1/2 cup frozen peas, thawed (optional)

Directions:
Heat the canola oil over medium heat in a large skillet. Add the ground turkey, breaking up the meat as it cooks until nicely browned. Drain off and discard any excess fat. Add the onion, celery, red peppers, jalapeno, oregano, cumin, red chili flakes, paprika, garlic, tomato paste, vinegar, and salt. Cook, stirring often, for 3 to 5 minutes. Add the olives, raisins, and capers, and simmer for 30 minutes, stirring occasionally. Just before serving, stir in the peas; cook for 1 minute more, until the peas are heated through.
