2 pounds cooked salmon, chilled (I like to grill the salmon, it adds a nice flavor)
1 cup red bell pepper, diced
½ cup diced red onion
2 tablespoons minced fresh dill
2 tablespoons capers, drained
2 tablespoons raspberry vinegar
2 tablespoons extra virgin olive oil
½ teaspoon sea salt
½ teaspoon freshly ground black pepper

Directions:
Directions:
Break the salmon into large flakes, removing any skin and bones, and place the salmon in a bowl. Add the red pepper, onion, dill, capers, vinegar, olive oil, salt and pepper. Mix well. Check seasonings. Served chilled or at room temperature.
