10 medium tomatoes
1 red bell pepper, chopped

1 yellow bell pepper, chopped

3 cloves garlic, minced

1 cucumber, peeled, seeded and chopped
1 small red onion, chopped

2 Serrano or jalapeno peppers, chopped
1/2 to 3/4 cup red wine vinegar, or to taste
2 Tbs. olive oil

2 tsp. coarse salt

1/2 tsp. freshly ground black pepper
1 tsp. chopped fresh dill

1 tsp. chopped fresh regular or lemon thyme
1/4 cup chopped cilantro

Directions:
Directions:
Heat a large pot of water to boiling. Drop tomatoes into boiling water for 10-15 seconds. Remove from water and peel skins. Give the tomatoes a rough chop.
Puree all ingredients in a blender or food processor until your desired consistency is reached. You made have to do this in batches. Taste to correct seasonings. Serve cold.
