½ cup Peanut butter
1 cup Tomato juice
¼ cup Brown sugar, packed
¼ cup Tomato paste
2 tbsp Lime juice
2 tbsp Ginger root, minced
1 clove Garlic, minced
6 small Chicken breast, boneless skinless
1 tbsp Cinnamon, ground
1 tsp Oregano leaves, dried
1 tbsp Oil
4 Green onions, chopped
2 tbsp Unsalted peanuts, chopped

Directions:

Preheat oven to 425 F°.
Mix peanut butter, tomato juice, sugar, tomato paste, lime juice, ginger and garlic. Set aside.
Coat chicken with combined cinnamon and oregano. Heat oil in nonstick skillet on med-high heat. Add chicken and cook 2 minutes on each side or until golden brown on both sides. Transfer to baking dish and top with peanut sauce.
Bake 20-25 minutes, turning occasionally and basting with sauce from bottom of dish. Top with onions and nuts.
