1 cup vegetable oil
1 1/2 cups sugar
1 tsp vanilla extract
3 large eggs
1/2 tsp salt
2 tsp cinnamon
2 1/2 cups flour
1 1/4 cups milk
1/2 tsp. baking soda
1 3.4oz box instant vanilla pudding
1 1/2 tsp baking powder
1/3 cup chopped nuts (black or english walnuts) optional

Directions:
Directions:
Preheat oven 325 degrees.
Combine oil, sugar, vanilla, eggs, salt and cinnamon in a large bowl.
Add flour, milk, soda, pudding, baking powder and walnuts (if desired).
Mix well.
Grease 2 large loaf pans and sprinkle with a mixture of cinnamon & sugar mixture.
Bake for one hour.

I use a rectangle cake pan instead of loaf pans & I usually triple the cinnamon....Also check your bread with a toothpick after 50 minutes.

Found this recipe several years ago & like it better than the old one (much more moist) & definitely less Hassle.....your cinnamon & sugar mixture for the bottom & top of the bread is fixed as you would use for cinnamon toast & don't be stingy with it.
