1 can cream of mushroom soup
1 1/4 cups water
1/2 cup milk
1/4 cup shredded mozzarella
3 T. grated parmesan cheese
1 1/2 cups frozen mixed vegetables
1/2 lb. skinless, boneless chicken breasts, cut into cubes
3/4 cup uncooked Arborio or long grain white rice

Directions:
Preheat oven to 400º. Mix soup, waqter, milk, cheeses, vegetables, chicken and rice in a shallow 3 qt baking dish. Cover. Bake for 35 minutes. Stir. Continue baking for additional 10 min, until rice is done. Let stand 5 minutes before serving.
