1 envelope gelatine
1/4 c cold water
1 c hot water
white of two eggs
3/4 c sugar
1/4 c lemon juice
1/4 tsp. salt
lemon rind

Directions:
Directions:
Soften gelatin in cold water. Add sugar, salt, hot water and stir until dissolved. Add lemon juice and grated rind of one lemon. Cool and when quite thick, beat until frothy; add whites of eggs beaten stiff and continue beating until stiff enough to hold its shape. Serve cold. May be made the day before . Serve with boiled Custard Sauce.

1/3 c sugar
2 eggs
pinch of salt
Cook on low heat, stir until it coats a spoon.Don't boil
