Crust:
1 2/3 C. graham crackers
2 T sugar
1 1/2 tsp. cinnamon
6 T melted butter

Filling:
1 1/2 lb (3 lg pkgs) cream cheese
3 eggs
1/2 tsp. vanilla
1 C sugar

Topping:
1 pt. sour cream
3 T. sugar
1/2 tsp. vanilla

Directions:
Directions:
Crust:
Roll fine graham crackers and add sugar, cinnamon, and melted butter.
Mix thoroughly and pat into bottom and sides of 10" spring mold pan or 3" deep pan.

Filling:
Mix softened cream cheese with sugar. Add one egg at at time and mix then add vanilla. Pour into crust.
Bake at 375 for 20 min. Make sure it is firm before going to next step.

Topping:
Whip sour cream, sugar, and vanilla. Pour SLOWLY over cake.
Bake 5 min. at 500. Cool and place in refrigerator
