butter for greasing a 13 x 9 pan; salt
1 lb. ziti; 1 tbls. olive oil
12 oz. pancetta, sliced in 1/4 inch slices, then chopped
SAUCE:
1 stick room temp unsalted butter; 3 1/2 c. room temp. whole milk
1/2 c. flour; zest of 2 large lemons
3/4 c. parmesan, grated; 1 tsp. salt; pinch or two of pepper
1 c. chopped fresh basil, 2 tbls. chopped fresh thyme
1/4 c. lemon juice; 2 c. shredded mozzarella
TOPPING:
2/3 C. plain breadcrumbs
1/3 c. parmesan, grated
olive oil to drizzle

Directions:
Preheat oven to 350º. Butter a 13 x 9 pan. Use center of oven for baking this dish.
Cook pasta (al dente); drain and set aside. In a large non-stick skillet heat oil and add pancetta; cook until brown and crispy. Drain pancetta on paper towels.
In a large saucepan melt butter (medium heat) and add flour to whisk until smooth, about 2 minutes. Gradually add milk while whisking...you do not want any lumps. Add lemon zest and simmer over medium heat until sauce thickens, about 10 minutes. Remove pan from heat and add salt and pepper.
In a large bowl combine the cheese sauce, pancetta, pasta, basil and thyme. Toss all and add lemon juice. Spoon into greased baking dish and top with mozzarella.
Mix the breadcrumbs and parmesan and top the pasta. Drizzle with olive oil and bake until lightly brown , 25 minutes or so. Cool slightly.©
