1 big salted herring or 1 jar pickled herring
1 big apple
2 medium sized, boiled potatoes -firm not soft
4-5 slices beets
1 medium-large onion
1 hard boiled egg

Directions:
Directions:
Place salted herring in cold water for 24 hours. Remove head, tail, a strip of thin belly, entrails and skin (cut along back and peel off). Carefully remove meat from bone (cut deep along back and pry meat from bones using back of a paring knife).

Drain pickled herring and throw away solution and onion rings. Skin and bone if needed.
Cut herring, apple, potatoes, beets and egg in small pieces. Chop onion. Place all ingredients in a bowl as you go along. Add small amount of mayonnaise and gently mix with a spoon. Small amount of beet juice may be used to color mayonnaise.
Do not leave any metal spoon in finished salad.
