Combine first 3 ingredients in a small bowl and let sit until foamy

Combine eggs and sugar in a large bowl. Stir in melted shortening, salt and milk. Make sure mixture in not too hot (lukewarm). Add yeast mixture and mix well. Add flour a cup at a time and mix until dough is too thick to stir. Pour out on heavily floured counter. Knead in flour until dough is soft but a lille rubbery. Greas a large bowl and put dough in bowl to rise until double its size. Cover with plastic wrap so it doesn't dry out. After double in size punch down dough breaking air pockets. Cover and let rise again until double. Roll dough out on floured counter into a large rectangle until 3/8 inch thick. Spread liberally with softened butter, sprinkle with cinnamon and granulated sugar. Roll into a log starting on the long side. Slice 1 to1 1/2 in wide slices. Mix cream and brown sugar. Spray baking pan with cooking spray. Pour enough caramel into pan to 3/8 inch thick. Let raise. Bake. Remove from oven and let sit for 3 min then turn out onto aluminum foil to cool.
