2 cups uncooked ziti / penne
Olive oil
1 Medium Onion diced
2 Carrots sliced/diced
3 cloves garlic finely diced
1 tsp dry basil
1 tsp dry oregano
1 16 oz can tomato sauce
1 8 oz can tomato paste
1 1/2 cups cooked chicken
1/2 cup shredded parmesian cheese
1 1/2 cups shredded mozz cheese

Directions:

Prepare ziti/penne according to package directions. Set aside.

Saute diced onion and carrots in olive oil. When soft add chopped garlic. After a few moments add oregano and basil. Again, after a few moments add tomato paste and sauce. Bring to boil and let set.

Combine sauce, 1/3 of the cheese cheese, and chicken. Mix with pasta in 9X9 in casserole dish. Top with remaining cheese.

Bake for 25-30 min at 350º, or until bubbling. Let set for 5 min. Serve with Garlic bread.

Save some of the pasta water to use to help moisten the pasta/meat/sauce mixture if it is too thick.
