1/2 cup general purpose flour
salt and pepper to taste
1 cup "Queso del pais", cubed (a.k.a. Queso Blanco, Puerto Rican White Cheese)
1 cup water
1 cup sugar
1 cinnamon stick
1 anise star
1 cup guava paste
1/4 cup white rum
2 leaves basil

Cheese:
1. Salt and pepper the flour
2. Coat the cheese cubes with flour and fry in 375 degree oil until golden brown
Sauce:
3. to prepare the syrup with water, sugar, cinnamon and anise, boil for 10 minutes
4. Strain to remove solids then mix with guava paste in food processor
5. bring rum to a simmer in a sauce pan and reduce to half by volume
6. Add rum to guava syrup, drizzle over fried cheese and garnish with minced basil

Queso Frito is literally Fried Cheese. This recipe finishes the fried cheese with a guava and rum sauce that, although I have never tasted, sounds amazing.
