Ingredients:  
First set of ingredients--
1 tablespoon minced garlic
1 tablespoon sea or Kosher salt
1.5 teaspoons paprika (Spanish if you can find it)
1/4 teaspoon tumeric
1 tablespoon oregano
1/2 teaspoon dill
1/2 teaspoon pepper

Second set of ingredients--
olive oil
chopped red and/or green peppers
potatoes (par boil a little first so they cook all the way) any kind, I like red
Chopped carrots
Chopped onion (yellow or red) optional
One large roasting chicken (whole, no inerds) start at room temp

Directions:
Directions:
Combine first half of ingredients in a small bowl and press under chicken skin.
Rub some on the outside of bird too. Put chicken in roasting pan. Chop second half of ingredients (except oil and chicken). Place veggies around chicken, drizzle everything with olive oil. I like to sprinkle veggies with some salt, rosemary or anything else. Cover with foil and roast one hour at 375 degrees. Turn oven up to 425 and roast another 30 minutes.
