1 Beef Tenderloin (2 to 3 lb.)
1 tbsp. Olive Oil
1/8 c. + 1/2 c. Sugar
zest of 1 Orange, divided into 2 equal parts
6 oz. Fresh Cranberries
1 c. Orange Juice
2 tbsp. Cornstarch
2 tbsp. Balsamic Vinegar
2 tbsp. Parsley, chopped

Rub the tenderloin with the olive oil. Heat a sauté pan large enough to hold the tenderloin over high heat until very hot. Sear the meat evenly all over - about 2 minutes per side. Remove from heat. Roll the seared tenderloin in 1/8 cup sugar. Place the tenderloin in a shallow baking pan and cook at 350 degrees for approximately 30 minutes, or until a meat thermometer reads 135 degrees for medium rare. While the tenderloin is in the oven, combine the cranberries, orange juice, balsamic vinegar, 1/2 cup sugar, cornstarch, and half of the orange zest into a saucepan and bring to a boil, stirring frequently. Reduce heat and simmer for 20 minutes or until mixture thickens. Serve the tenderloin on a platter accompanied by the cranberry sauce. Garnish with parsley and the remaining orange zest.
