Roast 3 to 4 lbs.
1 large package of Carrots
1 large Onion sliced
3 stalks celery sliced
6 large Red Potatoes quartered or several smaller potatoes whole
1 package Brown Gravy Mix
1 package dry Italian Dressing Mix
1 package dry Ranch Dressing Mix
1/2 or 3/4 cup water

Directions:
Directions:
Mix all dry ingredients together by placing in plastic bowl with lid and shaking well. Place all vegetables in bottom of crockpot. Rub both sides of roast with dry ingredients, sprinkle the rest of dry ingredients over vegetables. Pour water in bottom of crockpot. Place roast on top of vegetables. Set crockpot on low for 8 to 10 hours depending on size of roast.

Serve with side of asparagus or broccoli if desired. I use left overs to make homemade vegetable beef soup.
